Can't believe I forgot to write about my most recent kitchen experiments.
I had heard of quinoa about a year ago. I hesitated to try it out at first because I assumed it would be like couscous, which I don't really care for. After reading about it and learning that its a more healthy carb than starches like pasta and rice, I decided to give it a chance.
The first night I fixed some stir-fry zucchini to put with it and it was awesome, especially after eating (mostly) fast-food all weekend. There weren't any leftovers. Of course a little butter on top and I also made a couple eggs. Not a bad combination.
The next night I decided I would do a Mexican version, for a couple of reasons. One, for the sake of changing it up. Two, I had some black beans and chicken I could use and wanted to avoid going to the grocery store at all costs. This was a little more experimental figuring out how to season the chicken. I ended up mixing unknown quantities of chili powder, cumin, Tapatio sauce, taco seasoning and some Taco Bell sauce I randomly had. It turned out alright but could still use some perfecting.
