Today, for breakfast, I was inspired by an Instagram photo. The photo was what I believed to be a pancake with whip cream and a fruit syrup or preserves (maybe). My version was an Eggo waffle with cream cheese and raspberry jam. I don't prefer syrup on waffles and/or pancakes so I was excited to try something else and it was definitely a great choice. Since there wasn't syrup running out everywhere, I actually ended up folding it in half like a taco. Less mess and much tastier. I'll be having this again for sure.
For dinner, I was more-so inspired by my desire to eat something besides Spaghettios or fast-food. I was already craving Hollandaise sauce so I immediately started thinking of something I could make to put it on. I originally thought, "asparagus!" but it needed to be steamed on the stove and I wasn't ready for all that so I picked up one of those microwavable bags of broccoli.
At first, I was hesitant about the Hollandaise because I've made it at home with my mom a few times but had some bad experiences with the butter and eggs separating. Anyway, here is the recipe for what turned out really well for me.
Ingredients:
- 2 egg yolks
- 1 Tablespoon fresh lemon juice
- 3/4 stick of butter
- cayenne pepper
- salt
Directions:
1. Melt butter, measure out lemon juice and separate eggs.
2. Whisk eggs and add the lemon juice.
3. Continue whisking while adding melted butter until its mixed well.
4. Microwave for 20 seconds then remove to whisk for roughly 30 seconds.
5. Microwave again for 20 seconds and stir until smooth.
6. Add salt and pepper as needed.
When I removed mine from the microwave the second time, I could see that the eggs and butter were separating and got worried. It mixed right together after some more whisking. I didn't realize I didn't have any cayenne pepper until it was too late but it still worked out and tasted great.
While I was working on the sauce, I had some baked chicken going in the oven. I had just slapped some butter, lemon juice and rosemary on it and threw it in for about 20-30 minutes, on 450˚. It turned out really well, too.
Microwaved my broccoli and was done with that.
Because I was nervous about the chicken being done in the middle I cut it in half so it didn't look pretty any more. And broccoli is just broccoli... so I don't have any pictures from dinner. Now that I've perfected the recipe, I'll work on presentation for next time. :)
