muffin monday: banana crumb muffins


Recently, Paige decided we should start having "Muffin Monday" as well as something else special for every day of the week. Like tomorrow, is Tea Time Tuesday and so on... I'll blog about those when we get to them. My hopes for this newly established schedule will be more intentional time between us and Holli (our third housemate) as sisters in Christ, as well as create opportunities to be intentional with other friends.

Anyway, I find myself with extra ripe bananas fairly often so I am super excited about discovering this muffin recipe. I changed the name to make it sound more fun and because I altered the ingredients a little bit.


Banana Crumblies (Muffins) - makes 12

Preheat oven to 375˚
Grease or place papers in muffin tin.
You'll need three bowls.

Bowl 1: large mixing bowl - stir all ingredients together.
   1 1/2 cup all-purpose flour
   1 tsp baking soda
   1 tsp baking powder
   1/2 tsp salt

Bowl 2: medium/small bowl - mix all these together, then pour into Bowl 1.
   2 bananas, mashed
   3/4 cup sugar
   1 egg
   1/3 cup butter, melted
   3 tbsp of canola oil

Bowl 3: Mix dry ingredients, then use a dough cutter when adding the butter.
   1/2 cup brown sugar
   1/8 cup all-purpose flour
   1/2 tsp cinnamon
   2 tbsp butter

Spoon batter (Bowl 1 + 2) into muffin tin.
Sprinkle brown sugar & cinnamon mix (Bowl 3) on top.

**Paige wanted to try some with oatmeal on top, which was a great idea & they tasted great. The only downfall with this was that they didn't get as big as the others.
